Recipe from Cafecreosote:
This “super salad” makes a small meal in itself. The combination of ingredients may sound awfully weird, but they do work.
If you can’t find blood oranges, plain ones will do.

1/2 cup corn kernels, roasted
1 jalapeno chile pepper, minced
1/4 cup cilantro, chopped
3 medium blood oranges, peeled and sectioned
1 teaspoon wine vinegar
salt and pepper, to taste
1/2 cup rice vinegar
1/3 cup honey
1 tablespoon low sodium soy sauce
1 tablespoon grated ginger
1 tablespoon dark sesame oil
1/4 cup toasted pine nuts
1/2 cup diced avocado
1/4 cup goat cheese, crumbled
1. Wash and dry lettuce, then tear into bite-sized pieces. Place in a large salad bowl.Add corn kernels. In a small bowl, mix jalapeno, cilantro, oranges, wine vinegar, add salt and pepper. Refrigerate until ready to use.
2. Toss together vinegar, honey, soy sauce, ginger
root, oil, and salt substitute.
