Michael Wood’s Oregon contribution to me many years ago. This super healthy salad features fresh tomato, avocado, and mango, lime juice and honey. Look for fairly large mangoes, and buy preferably those that are yellow with a blush of red..
Mix equal proportions of:
Sliced Mango, Sliced Avocado, Sliced Tomato
Marinade with:
3 parts lime juice
2 parts fish sauce
1 part (warm liquefied) honey
Garnish with:
Chopped basil
Chili peanuts, crushed fine
Chile sauce like Zuzanne’s Hot Stuff Original Habenera Sauce (can be added.) The Fish Sauce I use is ‘Caravelle’ boullabaisse. ‘Nuoc Mam’ is a fish sauce from Vietnam.
Depending upon your ethnicity, feel free to call it TOM–AVO–MANG or AVO–MANG –TOM!
