Asian Plum Sauce

 

4# plums

2 C. brown sugar

1 C. granulated sugar

¾ C. chopped white onion

2 T. mustard seed

2 T. green chili peppers

1 small chunk of fresh ginger, finely cut

1 T . salt (I suggest less)

1 clove minced garlic

1 C. apple cider vinegar

1 T. cornstarch  + 1 T. water

 

Clean and chop plums.  Combine all else except cornstarch + water and add.  Boil until thick.  It won’t thicken, add cornstarch dissolved in water and continue to cook until desired consistency is reached.

Ladle into hot clean pint jars. Process 20 min. in boiling water or refrigerate in containers.
