Banana’s Foster
Usually this dish is flamed to burn the alcohol out.
Simmering will release most of the alcohol from the rum, but if you would rather – use 1 teaspoon rum extract and a cup of apple juice in place of rum.
Serves: 8
Ingredients:
4 tablespoons butter
1/4 cup brown sugar
1/4 cup maple syrup or 2 tablespoons dark molasses
1/4 cup rum
1 teaspoon cinnamon
4 bananas, sliced lengthwise
Melt butter in a wide skillet.
Add brown sugar and stir to dissolve.
Add syrup, rum and cinnamon, stirring constantly for 10 to 15 minutes.
Add bananas; stir to coat and heat 2 to 3 minutes.
Serve with whipped cream or vanilla cream over ice cream or on top of pancakes.
Edit: Please note, it is rare that I edit a given recipe, but since I have more than a few diabetic friends I suggest you might consider deleting the maple syrup dark molasses ingredient. Cinnamon to taste.
The rum should be white rum and if you really want to liquor it up, add 1 oz. of banana liquor. (or banana extract)
