Herring Salad

IT ISN’T LIKE MOTHER USED TO MAKE! – Unfortunately it is!

Herring Salad Heringsalad

2 cups diced boiled potatoes
1 1/4 – 1 1/2 cups marinated herring filets cut in small pieces
3/4 -1 cup chopped celery with leaves
1 Tbs. minced chives
1 Tbs. minced parsley
1 cup finely cut onions
1/4 cup plain yogurt
1/2 cup sour cream
1/4 cup mayonnaise
2 grated tart apples
3/4 tsp. paprika
2 Tbs. wine vinegar or lemon juice
1 tsp. French mustard Dijon
1/2 tsp. salt and 1/4 tsp white pepper

Combine ingredients and marinate in refrigerator for at least 1 hour. Serve on inner tightly cupped lettuce leaves. ( Other variations include using hard cooked eggs and pickles — garnish plate with chopped beet slices.)

This was never a favorite of mine, yet my Dad loved it. So did Wayne a friend of mine …. then again He has the palate of a seagull.
