You can make this Persian drink in two different way, either with seltzer water or flat water. It’s super simple to make and is quick to make! A sprig of fresh mint to garnish the drink would be nice. Blend all the ingredients for about 2 minutes. The consistency should be smooth and frothy.
Ingredients (4 glasses)
1 cup Yogurt
3 cups Water
1 tsp. Salt
1/2 tbsp Dried mint
Ice cubes
For an individual serving it would be:
- 2 tablespoons plain yogurt
- 1 cup carbonated water
- 1/2 teaspoon salt or less
- dash of dried peppermint
- top with ice cubes
The basic rule of thumb when making Doogh is to add 1/3 to 1/2 part yogurt to your glass, or pitcher, and top the rest with water. ( I prefer carbonated or seltzer water)
Add some salt and mint and your done. Powdered mint works even better. The the type of yogurt you use will dictate the taste of the the drink. So if your yogurt is sour, then your drink will be sour. I generally use a good Greek yogurt and I use Peppermint, rather than Applemint or Spearmint.
I like Greek-style yogurt because it’s firmer and denser than regular yogurt. Making your own is easier than you imagine; making homemade yogurt.
Last note, Indian versions might add a sweetener such as honey and a PINCH of freshly ground cumin seed. If you wish a tarter version, substitute something like cultured buttermilk. YUK! I would much rather opt for adding a bit of cultured sour cream for a more mouth smacking taste. Guess that is the German in me.
