Hot Pepper Sauces

Habenara

6 red habanera peppers, cored and seeded
2 cups onion, chopped
2 cloves garlic
4 allspice berries, crushed
1/2 tsp. ground cumin
1 Tbs. tomato paste
2 cups garlic cider vinegar

In a food processor, combine peppers, onion, garlic, allspice, and cumin. Process until fine. In a non-reactive saucepan, combine the pepper mixture with the tomato paste and vinegar. Bring to a boil over medium heat, stirring occasionally. Cool, bottle and refrigerate. This sauce is hot!Your might want to use latex gloves!

Jalapeno Sauce

6 cups sugar, 1 1/2 cups cider vinegar, 3 habanera peppers, cored and seeded. 2 red peppers, 1 can green chilies, 4 jalapeno peppers grated. Bring all the ingredients to a boil over medium heat. Boil 10 minutes, stirring occasionally. (Add certa if you wish to make a jelly.) Pour into jars; seal. This jelly or sauce is great on pork roasts. Also fairly hot.
