4-5 apples
1 lemon (to juice)
2 eggs separated
1 1/4 cup flour
1/2 cup milk (or white wine) COLD!
1/2-1 tsp. lemon zest
2 Tbs. sugar
pinch of salt
lard
cinnamon and sugar to dust
Pare and core the apples. Cut into 1/4+ inch slices. Sprinkle with lemon juice then sugar. Meanwhile combine the egg yolks, flour, milk, sugar and salt and mix into a smooth batter. Beat the whites and fold in. If you use the wine option, add a tsp. of vegetable oil to the batter. Dip the apples in the batter and fry in Crisco or like, until golden brown. Lay on paper towels to drain and dust both sides with cinnamon sugar. Serve hot or cooled.
Some people would also make a further sauce using a thickened port wine flavored with sugar, lemon and cinnamon. This would be poured over the slices.
