CARROT CAKE

1 1/2 cups Vegetable Oil, I use Canola
4 eggs, Beat
Add: 2 cups sugar
2 tsp. soda
1 1/2 Tbs. cinnamon
1/2 tsp. salt
Beat in: 2 cups flour
Add: 8 oz can of crushed pineapple
3 cups grated carrots
1 cup chopped walnuts
1 cup chopped dates (optional)

Mix well. Pour into a 9 x 13″ Cake Pan. Bake at 350 for 50-60 minutes.Icing: My personal choice is to skip the icing.

1 8oz. package of Cream Cheese.
1 lb. box of powdered sugar
1 cup of nuts, preferably walnuts
1/2 cup butter
1 tsp. Vanilla

Cream butter and cheese, have at room temperature. Add vanilla, sugar and nuts. Add milk or half and half for spreading.
