{"id":607,"date":"2014-05-12T17:40:37","date_gmt":"2014-05-12T17:40:37","guid":{"rendered":"http:\/\/sweetgeodes.com\/senft\/?page_id=607"},"modified":"2014-05-12T17:41:54","modified_gmt":"2014-05-12T17:41:54","slug":"cream-of-carrot-soup","status":"publish","type":"page","link":"http:\/\/sweetgeodes.com\/senft\/cream-of-carrot-soup\/","title":{"rendered":"Cream of Carrot Soup"},"content":{"rendered":"<p><span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong>from the kitchen of my friend Lee Ostlund<\/strong><\/span><\/p>\n<p><span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong>4 slices bacon chopped<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1\/4 cup butter<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 2 lb. carrots chopped or grated<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1 medium onion thinly sliced<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1 cup chopped celery<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1\/2 cup chopped turnip<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1\/2 cup flour<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 2 qt. chicken broth<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 2 sprigs parsley<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1 bay leaf<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> pinch of thyme<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> salt and pepper<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1 1\/2 cup milk<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> 1\/2 cup whipping cream whipped<\/strong><\/span><br \/>\n<span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong> thin carrot strips<\/strong><\/span><\/p>\n<p><span style=\"font-family: Verdana,Geneva; font-size: 12pt;\"><strong>Fry bacon in Dutch oven until limp, add butter. Add veggies. Saute until onion is transparent, 5 min. or more. Stir in flour. Cook and stir 2 minutes. Stir in broth. Heat to boiling, stirring constantly. Reduce heat, add the spices. Simmer 15 minutes, remove bay leaf. Place vegetable mixture in blender. Puree. Pour back into Dutch oven. Stir in the milk. Heat to near boiling, then reduce heat and stir over medium heat some five minutes. Taste, add salt and pepper. Swirl cream on top.
