Don&#8217;t be intimidated by the longer cooking time &#8211; it&#8217;s mostly passive time of waiting for the squash to roast. Top your bowl with toasted and crumbled walnuts or Rosemary croutons for added texture.<\/p>\n<\/div>\n<\/div>\n<p id=\"zlrecipe-ingredients\" class=\"h-4 strong\">Ingredients<\/p>\n<ul>\n<ul>\n<li id=\"zlrecipe-ingredient-0\" class=\"ingredient\">1 whole butternut squa<\/li>\n<li id=\"zlrecipe-ingredient-1\" class=\"ingredient\">Some toasted walnuts crumbled, or Rsosemary croutons.<\/li>\n<li id=\"zlrecipe-ingredient-0\" class=\"ingredient\">sh (mine weighed around 2-1\/3 pounds)<\/li>\n<li id=\"zlrecipe-ingredient-2\" class=\"ingredient\">2 cups almond milk, or other non-dairy milk of choice (plus \u00bc-1\/2 cup more if you want a thinner soup)<\/li>\n<\/ul>\n<\/ul>\n<div id=\"zlrecipe-ingredient-3\" class=\"ingredient-label\">Spices:<\/div>\n<ul id=\"zlrecipe-ingredients-list\">\n<li id=\"zlrecipe-ingredient-4\" class=\"ingredient\">1 tsp onion powder<\/li>\n<li id=\"zlrecipe-ingredient-5\" class=\"ingredient\">1 tsp garlic powder<\/li>\n<li id=\"zlrecipe-ingredient-6\" class=\"ingredient\">\u00bd tsp paprika (sweet or hot if you\u2019d like your soup to be a bit spicy)<\/li>\n<li id=\"zlrecipe-ingredient-7\" class=\"ingredient\">1 tsp fresh rosemary, or \u00bd tsp dried<\/li>\n<li id=\"zlrecipe-ingredient-8\" class=\"ingredient\">Pinch dry thyme (optional)<\/li>\n<li id=\"zlrecipe-ingredient-9\" class=\"ingredient\">Pinch dry sage (optional)<\/li>\n<li id=\"zlrecipe-ingredient-10\" class=\"ingredient\">Pinch dry oregano (optional)<\/li>\n<li id=\"zlrecipe-ingredient-11\" class=\"ingredient\">Salt, black pepper to taste<\/li>\n<\/ul>\n<p id=\"zlrecipe-instructions\" class=\"h-4 strong\">Instructions<\/p>\n<ol class=\"instructions\">\n<ol class=\"instructions\">\n<li id=\"zlrecipe-instruction-0\" class=\"instruction\">Preheat the oven to 400\u00b0. Wash and pat dry your butternut squash. Pierce it with a fork a few times and microwave for 3 minutes on high. This will soften it slightly to help you cut it in half easier. Let the squash cool off for 5 min.<\/li>\n<li id=\"zlrecipe-instruction-1\" class=\"instruction\">Cut the squash in half lengthwise \u2013 be careful as it may be hot inside from the microwaving. Scoop out and discard the seeds. Place the halves on a cookie sheet, brush the tops lightly with olive oil or spray with cooking spray. Bake in the oven** for 35-45 minutes, or until the squash is fork-tender. Take the squash out of the oven and cool for 7-10 minutes.<\/li>\n<\/ol>\n<\/ol>\n<p><img decoding=\"async\" class=\"instruction-image\" src=\"http:\/\/www.veganrunnereats.com\/wp-content\/uploads\/2014\/12\/Roasted-Butternut-Squash.jpg\" alt=\"\" \/><\/p>\n<ol id=\"zlrecipe-instructions-list\" class=\"instructions\">\n<li id=\"zlrecipe-instruction-3\" class=\"instruction\">Using a tablespoon, scoop out the flesh out of each half of the squash (be careful not to burn yourself!) and place it into the bowl of a food processor along with the rest of the ingredients <span class=\"bold\">except the Rosemary Journey Bar<\/span>. Blend the ingredients for 2-3 min, or until the mixture is completely smooth. If it\u2019s too thick, add more almond milk.<\/li>\n<li id=\"zlrecipe-instruction-4\" class=\"instruction\">Pop the nuts into a toaster to toast them. Crumble it up into pieces and use them as croutons. (or use Rosemary croutons.)<\/li>\n<li id=\"zlrecipe-instruction-5\" class=\"instruction\">Pour the soup mixture into a soup pot and gently reheat it on the stove. Adjust seasoning and spices to taste. Serve topped with your favorite garnish.<\/li>\n<li class=\"instruction\">If not Vegan a drizzle of sour cream would be nice, or Greek yogurt.<\/li>\n<\/ol>\n<p id=\"zlrecipe-notes\" class=\"h-4 strong\">Notes<\/p>\n<div id=\"zlrecipe-notes-list\">\n<p class=\"notes\">*If you\u2019d like a curried butternut squash soup, you can use a Coconut Curry Journey bar, and swap the spices for turmeric, curry, ground cumin and sweet paprika \u2013 adjust them to taste.<\/p>\n<p class=\"notes\">**Alternatively, you can cut the squash into cubes and steam them in a steamer basket for about 10 minutes.
