Horseradsish works too. <\/span><\/span><\/span>Serves 4 as a side dish<\/span><\/p>\n<h2><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Cook the potatoes<\/span><\/h2>\n<p><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Set a large pot of water to boil on the stove over high heat. While the water\u2019s heating, peel your potatoes. Some prefer to start with cold water, covering the potatoes by some two inches.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Chop your potatoes up into small chunks, add the uncooked garlic. The Roasted garlic would be added at a later stage.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">When your water has come up to a boil, toss in some kosher salt and drop your potatoes into the pot. Boil uncovered for about 15 minutes, depending on the size of your potato chunks.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">To test, fish a potato chunk out of the pot and press on it with a fork. It should press down easily.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">When your potatoes and garlic are cooked through, drain them.<\/span><\/span><\/span><\/span><\/span><\/p>\n<p><a href=\"http:\/\/sweetgeodes.com\/senft\/wp-content\/uploads\/2014\/06\/mashed-potato300.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-2399\" src=\"http:\/\/sweetgeodes.com\/senft\/wp-content\/uploads\/2014\/06\/mashed-potato300-300x218.jpg\" alt=\"mashed potato300\" width=\"300\" height=\"218\" data-id=\"2399\" srcset=\"http:\/\/sweetgeodes.com\/senft\/wp-content\/uploads\/2014\/06\/mashed-potato300-300x218.jpg 300w, http:\/\/sweetgeodes.com\/senft\/wp-content\/uploads\/2014\/06\/mashed-potato300.jpg 412w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><strong><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Season your potatoes<\/span><\/strong><\/p>\n<p><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Put the cooked chunks back into your empty, hot pot. If you roasted your garlic, you would add them now.\u00a0 <span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Toss in the butter\u00a0 With a potato masher,mash the potatoes and garlic to blend and mix in the butter. Add some chopped chives.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Add the sour cream to the potatoes. Pour in the heavy cream. Mix the sour cream and heavy cream in with a wooden spoon until it\u2019s well blended. Season with kosher salt and ground white pepper to taste.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Return to a medium low heat stirring continuously until all is incorporated.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Serve garnished with chopped chives.<\/span><\/span><\/span><\/span><\/span><\/p>\n<p><strong><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Tricks and alternatives to change the tempo:<\/span><\/strong><\/p>\n<p><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">1. One trick I learned from an old family friend: reserve about 1\/4 c. of the starchy water that the potatoes boiled in, and whip that in when you add the creams. If you want a creamy version this is the way to go. Not adding this gives a lumpier version.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">2. I tend to add freshly grated Parmesan cheese, paprika, black pepper, onion powder and garlic!<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">3. The best part about mashed potatoes is making potato cakes from them. Press a handful of cold mashed potato into a cake, dust each side with seasoned flour and fry them in a butter\/oil combination. Talk about out of this world! Hot and crunchy on the outside, creamy inside.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">4. Germans and other Europeans frequently add a good dollop of ground horseradish to them.<br \/>\n5. American: <span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Crumbled bacon and shredded cheddar cheese<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\"> 6. Vegan: Minced green herbs and garlic\u00a0 especially roasted garlic.<br \/>\n<span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\"> 7. If you have an open container, cover with aluminum foil. <\/span><span style=\"font-family: Trebuchet MS,Geneva; font-size: 14pt;\">Bake at 350 for 35 minutes, or until garlic is very squishy. <\/span><span style=\"font-family: Trebuchet MS,Geneva;
