{"id":1501,"date":"2014-05-21T22:35:33","date_gmt":"2014-05-21T22:35:33","guid":{"rendered":"http:\/\/sweetgeodes.com\/senft\/?page_id=1501"},"modified":"2014-05-21T22:35:33","modified_gmt":"2014-05-21T22:35:33","slug":"german-cauliflower-casserole","status":"publish","type":"page","link":"http:\/\/sweetgeodes.com\/senft\/german-cauliflower-casserole\/","title":{"rendered":"German Cauliflower Casserole"},"content":{"rendered":"<p><span style=\"font-size: 14pt;\"><strong>Blumenkohl<\/strong> <\/span>by Herb Senft<\/p>\n<p><b>1 Large Cauliflower or about 2 quarts florets<\/b><br \/>\n<b>1\/2\u00a0 cup+ mayonnaise\u00a0 (<i>German or Polish recipes would use two beaten egg yolks , poured over the cauliflower)<\/i><\/b><br \/>\n<b>2\u00a0 tsp. brown mustard\u00a0 (or more)<\/b><br \/>\n<b>1\/4 tsp. fresh-ground white pepper<\/b><br \/>\n<b>1 + cups (6 oz) shredded cheese (Gruyere , cheddar or your preference) <i>My mom used less and usually it was\u00a0Parmesan with\u00a0 bread crumbs.)<\/i><\/b><br \/>\n<b>1\/2 tsp. salt<\/b><br \/>\n<b>2-3 <\/b>Tb&#8217;s<b>. butter\u00a0 <\/b><br \/>\n<b>1 <\/b>Tb&#8217;s<b>. bread crumbs<\/b><\/p>\n<p><b>Break cauliflower into florets. Rinse<\/b><br \/>\n<b>Cook in 3 quarts boiling salted water until tender when pierced 8 minutes.\u00a0 Drain and carefully remove so the florets do not break up.\u00a0 (Or nuke in a microwave with some water.)<\/b><br \/>\n<b>Arrange cooked florets in a a 1 1\/2 quart casserole.<\/b><br \/>\n<b>Drizzle mixed mayonnaise\/mustard over cauliflower, sprinkle with pepper, and top with the cheese. (or use the egg yolk option.)<\/b><\/p>\n<p><b>Melt the butter and brown the bread crumbs. Cover cauliflower with the cheese, then the breadcrumbs.<\/b><br \/>\n<b>Bake in a 425 degree oven just until the cheese is lightly browned, about 5 minutes. Salt to taste. <\/b><br \/>\n(<b><i>Variations, add a tsp. of dill seed for a totally different flavor.\u00a0 Or for a more Indian flavor try frying off 2 <\/i><\/b><i>Tb&#8217;s<\/i><i>.<\/i><b><i> mustard seed in oil. Instead of mayo use 1 cup yogurt, no prepared mustard, tsp. sugar and a 1\/2 -1 tsp. ground cumin. Garnish with some mint.)\u00a0 <\/i><\/b><\/p>\n<p><b><i>If you do not want to roast the mustard seed, you can try 1 cup yogurt, 1 Tb&#8217;s or even two (depends on the mustard) prepared mustard. 1-2\u00a0 clove garlic minced, 1\/2-1 tsp. cumin ground cumin seed. 1\/2 tsp. paprika.)\u00a0 On these two Indian variations &#8212; leave off the cheese and breadcrumbs!\u00a0 This is supposed to be healthier!\u00a0 Maybe some Sesame seed!<\/i><\/b><\/p>\n<p><b><i>This marinade is drizzled over the cauliflower and allowed to sit some 15 minutes. Preheat oven to 475.
