{"id":1482,"date":"2014-05-21T16:12:55","date_gmt":"2014-05-21T16:12:55","guid":{"rendered":"http:\/\/sweetgeodes.com\/senft\/?page_id=1482"},"modified":"2014-05-21T16:16:46","modified_gmt":"2014-05-21T16:16:46","slug":"chicken-fajita-pizza","status":"publish","type":"page","link":"http:\/\/sweetgeodes.com\/senft\/chicken-fajita-pizza\/","title":{"rendered":"Chicken Fajita Pizza"},"content":{"rendered":"<p><b>Contributed by John Kenna<\/b><\/p>\n<ul>\n<li><b>5 to 8 oz. chicken breasts, boned and skined &#8211; cut into 1\/4&#8243; strips<\/b><\/li>\n<li><b>10&#8243; to 12&#8243; pre-baked pizza crust<\/b><\/li>\n<li><b>1 cup &#8220;thick and chunky&#8221; salsa [I like Pace Picante &#8211; medium heat]<\/b><\/li>\n<li><b>1 cup shredded sharp cheddar cheese<\/b><\/li>\n<li><b>1\/2 medium red bell pepper &#8211; cut into 1\/4&#8243; strips<\/b><\/li>\n<li><b>1\/2 medium green bell pepper &#8211; cut into 1\/4&#8243; strips<\/b><\/li>\n<li><b>1 small onion &#8211; thinly sliced<\/b><\/li>\n<li><b>1 teaspoon ground cumin<br \/>\n<\/b><\/li>\n<li><b>1 teaspoon chili powder [same as cumin]<\/b><\/li>\n<li><b>1\/4 cup chopped cilantro (optional)<\/b><\/li>\n<li><b>1 teaspoon canola oil<\/b><\/li>\n<li><b>1\/4 teaspoon salt<\/b><\/li>\n<\/ul>\n<p align=\"left\"><b>Heat oil in large skillet, add peppers and onion. Cook and stir for about two minutes until crisp-tender. Remove from skillet. Add chicken to skillet, season with cumin, chili powder and salt; cook and stir over medium-high heat 3 to 5 minutes, until juices run clear.<\/b><\/p>\n<p align=\"left\"><b>Place pizza crust on cookie sheet. Spread salsa over crust. Top with chicken, pepper\/onion mixture, cilantro and cheese. Bake in preheated 450 degree oven for 10 &#8211; 15 minutes until heated through.<\/b><\/p>\n<p align=\"left\"><span style=\"color: #008000;\"><strong>I love deadlines.
