{"id":1370,"date":"2014-05-20T19:02:06","date_gmt":"2014-05-20T19:02:06","guid":{"rendered":"http:\/\/sweetgeodes.com\/senft\/?page_id=1370"},"modified":"2014-05-20T19:04:24","modified_gmt":"2014-05-20T19:04:24","slug":"carrot-cake","status":"publish","type":"page","link":"http:\/\/sweetgeodes.com\/senft\/carrot-cake\/","title":{"rendered":"CARROT CAKE"},"content":{"rendered":"<p style=\"text-align: center;\"><strong>by John Stephens of Sequim, WA<\/strong><\/p>\n<p><strong>1 1\/2 cups Vegetable Oil, I use Canola<\/strong><br \/>\n<strong>4 eggs, Beat<\/strong><br \/>\n<strong>Add: 2 cups sugar<\/strong><br \/>\n<strong>2 tsp. soda<\/strong><br \/>\n<strong>1 1\/2 Tbs. cinnamon<\/strong><br \/>\n<strong>1\/2 tsp. salt<\/strong><br \/>\n<strong>Beat in: 2 cups flour<\/strong><br \/>\n<strong>Add: 8 oz can of crushed pineapple<\/strong><br \/>\n<strong>3 cups grated carrots<\/strong><br \/>\n<strong>1 cup chopped walnuts<\/strong><br \/>\n<strong>1 cup chopped dates (optional)<\/strong><\/p>\n<p><strong>Mix well. Pour into a 9 x 13&#8243; Cake Pan. Bake at 350 for 50-60 minutes.<\/strong><strong>Icing: My personal choice is to skip the icing.<\/strong><\/p>\n<p><strong>1 8oz. package of Cream Cheese.<\/strong><br \/>\n<strong>1 lb. box of powdered sugar<\/strong><br \/>\n<strong>1 cup of nuts, preferably walnuts<\/strong><br \/>\n<strong>1\/2 cup butter<\/strong><br \/>\n<strong>1 tsp. Vanilla<\/strong><\/p>\n<p><strong>Cream butter and cheese, have at room temperature. Add vanilla, sugar and nuts.
