{"id":1186,"date":"2014-05-19T16:32:57","date_gmt":"2014-05-19T16:32:57","guid":{"rendered":"http:\/\/sweetgeodes.com\/senft\/?page_id=1186"},"modified":"2022-06-03T23:16:51","modified_gmt":"2022-06-03T23:16:51","slug":"baked-orzo-peppers-cheese","status":"publish","type":"page","link":"http:\/\/sweetgeodes.com\/senft\/baked-orzo-peppers-cheese\/","title":{"rendered":"Baked Orzo with Peppers &#038; Cheese"},"content":{"rendered":"<p><span style=\"font-size: 14pt;\">Ingredients:<\/span><\/p>\n<p>1 cup Orzo<br \/>\n2 tsp. salt<br \/>\n1\/2 cup diced, roasted red peppers (or 1 cup!)<br \/>\n1\/2 cup diced green chilies (medium hot OR?)<br \/>\n1 cup Monterey Jack cheese&lt;<br \/>\n1 cup sour cream<br \/>\n1\/2 cup freshly grated Parmesan cheese<br \/>\n2 tbs. butter<\/p>\n<p>Boil the Orzo according to directions. Drain. Place Orzo in a buttered casserole with the red peppers, chilies and cheese.<br \/>\nMix the sour cream, grated cheese, and butter. Spread over the Orzo mixture.<br \/>\nBake, on the upper shelf of the oven, for 20 minutes at 350 degrees. Let cool slightly before serving. Serves 6.<\/p>\n<p>(Try to use FRESH Parmesan)<\/p>\n<p><span style=\"color: #008000;\">\u201cVirtues are virtues only to those who appreciate them\u201d<\/span><\/p>\n<p>Considering a posted comment about dieting I will add: <span style=\"color: #008000;\">&#8220;Dieting: triumph of mind over platter.&#8221;<\/span><\/p>\n<p>I first had this dish at the Miner&#8217;s and it was quite good. I would have used more peppers. Another hint being that fresh Parmesan gives a much better flavor to the dish. If there are leftovers it can even be frozen.
